- 1 Large sweet potato, peeled, Medium diced and backed or broiled
- 1 cup brown rice, cooked
- 8 ounces black beans, drained and rinsed
- 1/4 tsp. onion powder
- 1/4 tsp. chili powder
- 1/4 tsp. cumin
- Sea Salt to taste
Toss all items together in a pot, heat to desired temperature. Pour in a serving dish, top with your favorite salsa, guacamole, serve with tortillas… Enjoy.
